Dalrymple Pinot Noir is sourced from the vineyard at Pipers River in the Coal River Valley, with the addition of grapes from Swansea and Ouse. The blending of grapes from distinct terroirs results in an incredibly complex wine with layers of flavours and a rich colour. The wine was pressed at the completion of fermentation and then aged in French oak barriques for a touch of oak. The generous berry fruit aromas and hints of fresh plums are apparent in the first sip, evidence of a warm growing season. Savoury notes of dried Provencal herbs and dried meats increase the complexity, allowing more layers to emerge as the bottle breathes.
